Here is another bread recipe that was specifically designed to build muscle and lose fat, except this one has fewer carbs than a protein bar for a whopping serving! You can also make it completely gluten-free if you use gluten-free oats or oat flour. Can I get an Amen people? This one has an extra step because you have to grate the zucchini, but that only takes about five minutes. If you have a food processor, then it would be quicker. Just throw the sucker in and shred that bad boy! (I really should get off my duff and go buy one, shouldn’t I?)
These bars are a just a little more involved than my other bar recipes because we will be making our own no-carb chocolate coating! Now before you recoil in fear, it only takes about ten minutes from start to finish…and there is (drum roll please)… NO COOKING! If you want to save calories, you can leave out the first step. Or simply use less and save the rest of the chocolate for next time.

We will be using sorghum flour for the pancakes — a light, fluffy, gluten-free, neutral tasting flour that makes for perfect pancakes in both taste and texture. You can buy sorghum flour at most health food stores, or supermarkets that have a well-stocked gluten-free section. If you are very gluten sensitive, you’ll want to make double sure all of the labels say “Gluten Free”. Some people are more sensitive to gluten than others.

You can make these by the batch along with one of my other bar recipes, and have several different flavors at your disposal. These taste like chewy, moist peanut-y brownies. Even better, they just so happen to be packed to the gills with protein. Another plus, they only have 187 calories each!
