Summer’s here and it’s high season for great fruit—and fitting into a bikini! This is the perfect snack/meal to keep you perfectly satisfied for a while. The berries are at their sweetest, and now is the best time of year to enjoy them! Not only is this is a healthy snack, it’s ridiculously easy to make. Plus, you can even use whatever fruit you want.
I’ve calculated the macros of only the yogurt part because you can use any fruit your little heart desires, so it may always be different. Here’s where you can get creative and have fun! You can use berries (add 40-60 calories, most types of berries have the same nutrition info), bananas (add 105 calories), kiwi (40 calories), peaches (60 calories), mangoes, nectarines, grapefruit, oranges, tangerines, plums, dragon fruit, and so on. I used a variety of fruit for the picture in the recipe: black and blueberries in one layer, strawberries in another layer, nectarines in another layer, and finishing with another black and blueberry layer.
You can even pack this parfait in a container and make work way more fun at 2:30 when you are starting to fade!
Ingredients:
- 1 scoop EFX Sports Pure Whey
- ½ cup nonfat Greek yogurt
- 1 packet of stevia sweetener
I used the equivalent of 1 cup of fruit:
- ¼ cup blueberries
- ¼ cup blackberries
- 3 large strawberries
- 1 nectarine
Directions:
Mix the yogurt, protein, and stevia together in a bowl until smooth. Slice the larger fruit and add it as a bottom layer—I used strawberries. Add some of the yogurt mixture, smooth it flat with a spoon, then add another layer of fruit. I used blue & blackberries in mine. Then, add another yogurt layer…and, well, you get the picture. It’s fun, easy, and OH SO YUMMY!
