The idea of making your own cheesecake sounds intimidating, doesn’t it? What if I all you had to do is take a few ingredients, mix them together, pour them into a crust (or bowl), and then freeze it for a mouthwatering cheesecake? It’s so easy, it’s almost hard to believe. If you want to make friends in the gym, impress your date, or give your kids a snack they won’t know is healthy, by all means—bring on this cheesecake! Totally guilt-free cheesecake that will help you build muscle is actually possible—and easy!! Yes, indeed-y my friends.
For this cheesecake, I chose to use a ready-made graham cracker crust. But, you can also make it without a crust to cut out nearly a third of the calories. I will provide the nutrition information below for both. If you choose to go crustless, you can make single servings or a whole pie—your choice! You can make it in a bowl, Tupperware, or anything that tickles your fancy that’s freezer-safe. Serve with sugar-free or calorie-free strawberry syrup and fresh strawberries, if desired.
Ingredients:
- 3 scoops of vanilla EFX Pure Whey
- 1 cup of Greek yogurt
- 1 8oz. package of low-fat cream cheese or Neufchatel cheese
- 1 cup of chopped strawberries
- 2 packets of stevia (if you like it on the sweeter side)
- ¼ tsp. strawberry flavor baking extract (optional)
- ½ tsp. extra rich or regular vanilla extract (optional)
- 1 pie crust (optional)
Directions:
Put all of the ingredients into a large bowl and start squishing it with a large spoon or fork. Mix until smooth—this works much quicker with a hand mixer (unless you really want to get in that extra biceps workout!). Spoon the mixture into the crust or serving bowls and put in the freezer for a few hours—a big pie will take longer to get solid than smaller servings. You will want to eat it within a couple of days of making it. Take out a half hour to an hour before serving and prepare to impress your date, your gym buddies, your kids, yourself, or your bathroom scale!
