I have to admit that my favorite flavor is not chocolate. So, for me to rave about something as weird as chocolate pancakes means they have to be pretty darn special…and they are! These pancakes are moist and chocolaty, and they work great with the easy protein icing I will share with you. In fact, the icing is better for you than almost any syrup because it’s made with yogurt, so it has probiotics, protein, vitamins, and minerals.
Chocolate is often demonized as fattening, acne-causing, etc. However, chocolate has a whole host of benefits. The problem is that when it’s mixed with lots of sugar and cocoa butter to make foods like chocolate bars and chips, it takes a healthy thing and turns into something that is not so healthy.
We are going to do the opposite and make something just as good but without the guilt! Another good thing about these pancakes is that they can be made gluten-free (if you use gluten-free oats), and they are ridiculously high in protein! What could possibly be better?
Ingredients:
Icing:
- ½ scoop of EFX Sports Pure Whey vanilla or chocolate
- ¼ cup plain nonfat Greek or regular nonfat plain yogurt
- ½ packet of stevia or 1 packet of monk fruit sweetener (optional)
- ½ capful of vanilla extract (optional)
Pancakes:
- ½ scoop of EFX Sports Pure Whey vanilla or chocolate
- ¼ cup quick or 5-minute oats
- ½ tbsp. unsweetened baking cocoa powder
- 1/3 cup egg whites 1 tsp vanilla extract
- ¼ cup unsweetened applesauce
- ¼ tsp. baking soda Nonstick spray
Directions:
Icing:
put all of the ingredients in a small bowl and mix together. Once pancakes are done, spread it on top.
Pancakes:
Put all of the ingredients in a bowl and whisk with a fork (it should mix very easily). Spray a pan with nonstick spray and put on medium heat. When the pan is hot enough, pour batter in 3-4 inch circles. After about two minutes, check by carefully lifting pancakes with a thin spatula to see if they are stiff enough to flip. If so, flip and let them cook for another minute or two. Remove them and cover with the icing. Eat and fall in love with them as much as I have!
